When defrosting fish in the fridge (or anywhere, for that matter), don't forget to put it on a plate. It seems obvious enough, but it didn't cross my mind. And now my fridge smells awfully fishy.
It's Me, Mom - I usually wrap fish in aluminum foil or freezer wrap before freezing and then put it on a plate in the fridge when it's time to defrost. If you have more than a few pieces of fish (or anything else for that matter) wrap them individually and then pop them into a freezer bag. It keeps the same kinds of food together and is easier to locate in your freezer. Be sure to mark the bag with contents and date.
Yikes! On an unrelated topic, here's a question. Have you tried chocolate chip cookies? I've been making them for 30 years, but I often have the problem of them looking flat and thin on the edges. If you run into any advice on the topic, let me know!

The freezer bag is also great for marinating.
